Stage 2 Cupcake Class - 21 April 2012


A very hard working group this morning, who created beautiful looking cupcakes.

This was our Stage 2 class, for people who have already been to Stage 1.

We covered gum paste, flower paste, shaping paste using ball tools and foam, and created rose buds and large petalled roses.

A little later, we made the spectacular buttercream flowers directly onto the cakes.


I think they all looked very pretty!

An Amazing Stage 2 Class




We had a great Stage 2 Cupcake Class on Saturday morning.

Six ladies managing to create beautiful flowers with buttercream and flower paste, in very warm conditions!

In the Stage 2 class, we spend time looking at new nozzle techniques to create roses, peonies and chrysanthemums with buttercream.  We then create flower paste rosebuds and then we get onto the large petalled roses.

Fiddly things, but one of those things that once you have the technique, you just need to practice practice practice! 

I thought the finished boxes of cupcakes looked incredibly talented.










Our next Stage 2 class is Friday 11 April at 11am - 1.30pm, £60.

This includes all materials, ingredients, 6 decorated cupcakes to take home and a top tips/recipe booklet.

New Stage 2 Class date added




New date for Stage 2 Cupcake Class

Saturday 21 April

9.45am - 12.15pm

During this class we take the skills you have learnt in the Stage 1 Class a little further.

We get more creative with the sugarcraft side of decorating, try different nozzles to the usual classic star shape, make sugarpaste flowers and petals and buttercream flowers, it's great fun!

Places go very quickly, so book soon!

January Stage 2 Cupcake Class


The morning started early with me making some gorgeous Red Velvet Cupcakes with a vanilla creamcheese frosting, sprinkled with cake crumbs.

We enjoyed eating them whilst talking about the recipe and the frosting!

Today's group were here to take their skills a stage further.  We looked at a new nozzle that created the beautiful buttercream flower below.


Using gum paste and fondant paste we made small rose buds and large petalled rose flowers.

Fiddly and time consuming but fun!

Practice practice practice.....



Then it was the fun part, decorating!  Swirling, glittering and sprinkling.

Stage 2 Cupcake Class


We started the day off with a Stage 2 Cupcake class, sat around the kitchen table with lots of new nozzles and tools to play with.

Using flower/gum paste and fondant we shaped some flowers and butterflies, then went onto small bud roses, and then the larger fondant rose.  Making each little petal and gently shaping them into place. Everyone did so well today, the flowers and colours were fantastic.




We then moved onto our little flower nail and new nozzle and made some beautiful buttercream roses and carnations.  Great to practice before putting them directly onto the cupcakes.

Red Velvet Cupcakes


This is a colour to wake you up in the morning!

I was up so early, I could hear the owls in the woods.....


This is the mixture, vibrant and red for Red Velvet Cupcakes.

There is a mix of cocoa, buttermilk, white wine vinegar and bicarbonate in the cake mixture.

We talk about these cupcakes (and eat them!) in our Stage 2 Cupcake Class.

Here they are going into the Aga.....

Red Velvet Cupakes have a classic cream cheese frosting, with some cake crumbs (and red glitter!) sprinkled on the top.
