Raspberry Cupcakes


My Raspberries are finally ready for picking.

These Cupcakes are delicious, I made a vanilla cupcake and popped a raspberry on top before baking.  I didn't cover it, I just left it on the top of the mixture, it sinks into the middle during the bake.


I found some natural raspberry flavouring to beat into the buttercream and they tasted delicious.

Another option would be to use some raspberries to make a natural puree; push the raspberries through a sieve and stir into the buttcream, either fully to make a lovely pink colour, or as a marbly pattern.

Following my trip to Sainsburys, I bought their new pretty cupcake cases, some raspberries and tinned peaches, and came up with this gorgeous cupcake.

A Hot Cupcake Class!


First thing this morning you could tell it was going to be a hot and sunny day!

I love the sunshine coming through the trees in this photograph.

We had a full class for Cupcakes today, I made some raspberry and vanilla cupcakes for our breaktime.  Raspberries picked from the garden, they were inside the cupcake as well as on the top of the pink raspberry icing .... delicious.


Today's Cupcakers did brilliantly because it was ever so hot, I just kept pouring everybody more water!

We had a boy theme going today, because we were all Mums with boys, not a girl between us!

White Chocolate Raspberry Cupcakes


I made these delicious and pretty Cupcakes today.

I used these lovely new White Chocolate Raspberries from Marks and Spencer, they are scrummy.  

(Inside is a freeze dried raspberry surrounded with white chocolate)
