Chocolate Cupcake Class - 28 April 2012


We had yet more lovely Chocolate cupcake creations at Treetops this weekend.

We used the amazing Cocoform from Squires to create some little chocolate decorations alongside some fondant icing decorations in a contrasting colour.  The great thing about chocolate is it goes so well with so many colours!

I always love it with purple, it makes me think (and taste) Dairy Milk and of course orange to link with Terrys Chocolate Orange


We grated some very fine orange zest (you don't want it too coarse or it will get stuck in your nozzle!) into the buttercream.

The buttercream was mixed with either melted dark chocolate or cocoa powder.

Peachy


Delicious!

Following my trip to Sainsburys, I bought their new pretty cupcake cases, some raspberries and tinned peaches, and came up with this gorgeous cupcake.

We had a Stage 1 Cupcake Class, where we made and baked the Cupcakes, made some fondant icing shapes and then lots of delicious vanilla buttercream. 







A great result; wonderful cupcakes and happy faces!

Chocolate Cupcake Group - 21 April 2012


My lovely Falkland ladies came back today as a group to make Chocolate Cupcakes.

It was great fun, especially because they were so imaginative and used gorgeous colourings and combinations.

We had chocolate everywhere!  Melted, grated, sieved, cocoa powder, we made ganache with double cream, there were bars of Green & Blacks everywhere, it was definitely a chocolate high!

I look forward to seeing you back at Stage 2 in the Autumn!







Stage 2 Cupcake Class - 21 April 2012


A very hard working group this morning, who created beautiful looking cupcakes.

This was our Stage 2 class, for people who have already been to Stage 1.

We covered gum paste, flower paste, shaping paste using ball tools and foam, and created rose buds and large petalled roses.

A little later, we made the spectacular buttercream flowers directly onto the cakes.


I think they all looked very pretty!

During this new class we will cover techniques needed to bake cupcakes for those with intolerances or allergies.

Come and learn about alternative flours and ingredients and understand the whole new world of xantham gum, flaxseeds, egg replacers, milks, oils and flavourings!

100th Birthday Cupcakes!


What a great start to the week, some cupcakes for a Newbury gentleman who celebrates his 100th birthday today!

They were ordered by Sovereign Housing who are doing a birthday presentation this morning.

They are vanilla cupcakes with vanilla buttercream, topped with fondant 100's, stars and some little spring flowers which are a link to his love of gardening.
